There are two different forms:
Fly-starter (Fresh Liquid Yeast) also known
as fresh fluid starter. Product in vivo and
stored cool ready for use, without the
tedious and delicate practice of rehydration.
The completely sterile isolation,
concentration and reproduction technology
assure the purity of the strain with total
absence of any bacteria, colis or other
contaminants species. This starter is
produced fresh in 1 kg bottles (2,2 lbs.)
and stored in refrigerator at a temperature
between 2 and 4 °C (39°F). The liquid form
provides a simple and precise use in all
operations of inoculation. Shipping and
transport occurs in thermally insulated and
refrigerated boxes until delivered to the
customer where the product arrives in
perfect condition. From this moment it is
important that the starter is properly
stored in refrigerator or in a common wine
cooler (4 ° C).
This fresh starter is in solid or semi solid
form and is suitable for both inocula
refermentations or fermentations or for “sur
lees” use. It is produced in sizes from 0.5
to 1.0 kg (1,1-2,2 lbs).
